8 steps
  1. 01

Stir the active dry yeast into the warmed whole milk and let stand until foamy.

  2. 02

Mix the all-purpose flour, white sugar, and salt. Add the yeast mixture, unsalted butter, and egg, then knead until smooth and elastic.

  3. 03

Cover and let rise until nearly doubled.

  4. 04

Simmer the poppy seeds in the whole milk until most of the liquid is absorbed. Stir in the white sugar, raisins, vanilla extract, and unsalted butter, then cool completely.

  5. 05

Roll the dough into a rectangle about 5 mm (1/4 inch) thick. Spread the filling evenly, leaving a narrow border, then roll up tightly from a long side and pinch the seam closed.

  6. 06

Place seam-side down on a lined baking tray, cover, and let rise until puffy. Preheat the oven to 180°C (350°F).

  7. 07

Brush with the egg yolk and bake for 30 to 35 minutes, until deep golden and cooked through.

  8. 08

Cool before slicing so the spiral sets cleanly.
