    Simmer the beet in the water with the salt until tender. Drain and cool, then grate or finely chop.

    Whisk the kefir and sour cream until smooth. Stir in the cooked beet, cucumber, fresh dill, chive, lemon juice, salt, and black pepper.

    Chill the soup promptly to 4°C (39°F) or colder.

    Bring the water to a boil, add the eggs, and cook for 10 to 12 minutes. Cool, peel, and halve.
