    Water

    Kefir

    Cucumber (finely diced)

    Fresh Dill (finely chopped)

    Distilled White Vinegar

    Place the beet in the water and simmer until easily pierced with a knife. Lift it out, cool enough to handle, then peel and grate it coarsely.

    In a separate saucepan, cover the eggs with water, bring to a boil, then remove from the heat, cover, and let stand for 10 minutes. Cool in cold water, peel, and halve.

    Combine the grated beet and kefir in a large bowl.
