Method

Combine the white rice, tomato, onion, fresh parsley, fresh mint, tomato paste, salt, and black pepper in a bowl. Mix until evenly combined.

Lay one grape leaf shiny-side down, place a small amount of filling near the stem end, fold in the sides, and roll tightly. Repeat with the remaining leaves and filling.

Arrange the rolls snugly in a wide pot.

Pour over the extra virgin olive oil, lemon juice, and water.

Place a heatproof plate over the rolls to keep them in place, cover the pot, and simmer gently for 50 to 60 minutes, until the white rice is tender and the grape leaves are soft.
