    Combine the ground lamb, white rice, onion, fresh dill, fresh mint, fresh coriander, tomato paste, salt, and black pepper in a bowl and mix until evenly combined.

    Lay a grape leaf shiny-side down, place a small spoonful of filling near the stem end, fold in the sides, and roll into a tight parcel. Repeat with the remaining grape leaves and filling.

    Arrange the stuffed grape leaves seam-side down in a snug pot. Scatter the unsalted butter over the top and pour in the water.

    Cover the rolls with a heatproof plate to keep them from opening, then place a lid on the pot and bring everything to a gentle simmer.

    Cook over low heat until the white rice is tender and the grape leaves are soft.
