    Mix the all-purpose flour with the salt, add the water, and knead until smooth. Cover and let the dough rest while you make the stew.

    Melt the ghee in a large pot over medium heat. Add the onion and cook until golden.

    Stir in the garlic, tomato, and tomato paste and cook until thick and well blended.

    Add the baharat, turmeric powder, black pepper, cinnamon stick, and bay leaves, stirring until fragrant.

    Add the lamb shoulder and brown it lightly in the spiced base.

    Pour in the lamb stock, add the dried limes and salt, then simmer gently for 55 to 65 minutes, until the lamb is nearly tender.

    Add the carrot and potato and simmer for 10 minutes. Add the zucchini, eggplant, and okra and continue simmering until all the vegetables are beginning to soften.

    Roll the dough very thin and tear it into small pieces. Drop the pieces one by one into the stew, stirring gently so they do not stick together.

    Cook for 10 to 15 minutes, until the dough pieces are tender and the broth has thickened slightly.
