KnafehCheese Pastry with Syrup and Pistachios

Shredded pastry is layered with mild brined cheese, baked until crisp and golden, then soaked with fragrant syrup and finished with pistachios. The contrast between crunchy pastry, soft cheese, and warm syrup is the hallmark of this famous dessert.

7 steps
  1. 01

Preheat the oven to 200°C (400°F).

  2. 02

Toss the kataifi pastry thoroughly with the melted unsalted butter.

  3. 03

Press half of the pastry into a baking dish. Spread the nabulsi cheese evenly over the pastry, then cover with the remaining pastry and press lightly.

  4. 04

Bake until the top is deeply golden and crisp.

  5. 05

Simmer the white sugar and water until the sugar has dissolved and the syrup thickens slightly. Remove from the heat and stir in the orange blossom water.

  6. 06

Pour the warm syrup over the hot pastry so it soaks in evenly.

  7. 07

Scatter the pistachio nuts over the top and serve while still warm.
