Method
Follow each step in order. Ingredient names are highlighted as you go.

Place the red kidney beans in a nonreactive container, cover with the cold water, and refrigerate overnight. Drain before cooking.

Place the drained beans in a pot and pour in the water. Bring to a vigorous boil and boil uncovered for at least 10 minutes, then lower the heat and simmer until nearly tender.

Add the coconut milk, scallion, garlic, fresh thyme, allspice, scotch bonnet chili, salt, and black pepper and return to a simmer.

Stir in the white rice, cover tightly, and cook over low heat until the rice is tender and the liquid is absorbed.

Remove the scotch bonnet chili and fresh thyme stems, rest the pot off the heat for 10 minutes, then fluff gently.
