Method

Cover the red kidney beans with the water and bring to a full rolling boil. Boil for 30 minutes, then simmer until tender and drain well.

Heat the vegetable oil in a heavy pot over medium heat. Add the onion and garlic and cook until softened.

Add the cooked red kidney beans, coconut milk, fresh thyme, and bay leaf.

Stir in the white rice and water, then bring to a boil.

Season with the salt and black pepper, cover, and cook over low heat until the white rice is tender and the liquid is absorbed.

Remove the bay leaf, rest the rice covered for 10 minutes, then fluff and serve hot.
