    Melt the unsalted butter in a large pot over medium heat. Add the leek and cook until softened but not browned.

    Add the potato and carrot, then pour in the fish stock and add the bay leaf. Bring to a gentle boil.

    Lower the heat and simmer until the potato is almost tender.

    Add the Atlantic salmon and cook gently until it is opaque, flakes easily, and reaches 63°C (145°F).

    Stir in the heavy cream, then season with salt and black pepper. Heat just until hot; do not let the soup boil hard after adding the cream.

    Remove the bay leaf, stir in the soup dill, and spoon the soup into bowls. Scatter the garnish dill on top before serving.
