Melt the unsalted butter in a large pot over medium heat. Add the onion, carrot, and celery, and cook until the vegetables begin to soften.

Add the split peas, ham, meat stock, bay leaves, and dried thyme. Bring the soup to a gentle simmer.

Cook partially covered, stirring from time to time, until the split peas are very soft and the soup has become thick and creamy.
