Bajan Coconut BreadYeasted Coconut Loaf

This Bajan-style yeast loaf combines wheat flour and coconut for a lightly sweet, sliceable bread. Coconut breads in Barbados are prepared in several ways; this is a yeasted variation rather than the richer quick bread often called sweet bread.

8 steps
  1. 01

Mix the coconut milk, water, brown sugar, and active dry yeast in a bowl and let the mixture stand until foamy.

  2. 02

In a larger bowl, combine the bread flour and salt, then rub in the unsalted butter until it is evenly distributed.

  3. 03

Pour in the yeast mixture and mix to form a soft dough.

  4. 04

Knead the dough until smooth, then work in the coconut meat until it is evenly spread through the dough.

  5. 05

Cover the dough and let it rise until doubled in size.

  6. 06

Shape the dough into a loaf, place it in a greased loaf pan, and let it rise again until puffy.

  7. 07

Bake at 190°C (375°F) until the loaf is deep golden and sounds hollow when tapped.

  8. 08

    Cool the bread before slicing.
