Bajan Coconut BreadYeasted Coconut Loaf
This Bajan-style yeast loaf combines wheat flour and coconut for a lightly sweet, sliceable bread. Coconut breads in Barbados are prepared in several ways; this is a yeasted variation rather than the richer quick bread often called sweet bread.
