    Whole Chicken (cut into pieces)
  • 200g
    Onion (finely chopped)
  • 12g
    Garlic (crushed)
  • 300g
    Tomato (finely chopped)
  • 30ml
    Vegetable Oil
  • 700ml
    Water
  • 120g
    Peanut Butter
  • 8g
    Salt
  • 2g
    Black Pepper

    Heat the vegetable oil in a large pot over medium heat.

    Add the onion and cook until softened, then stir in the garlic and cook until fragrant.

    Add the chicken pieces and turn them until lightly browned on all sides.

    Stir in the tomato and cook until it breaks down into a thick base.

    Pour in the water, bring to a gentle simmer around 95°C (203°F), cover, and cook until the chicken is tender and reaches 74°C (165°F) in the thickest pieces.

    Whisk the peanut butter with a ladleful of hot cooking liquid until smooth, then stir it back into the pot.

    Season with the salt and black pepper and simmer uncovered around 90°C (194°F) until the sauce thickens and coats the chicken.
