- 800gLamb Shoulder (cut into chunks)
- 200gOnion (finely chopped)
- 20gGarlic (minced)
- 300gTomato (chopped)
- 30gTomato Paste
- 8gCumin Powder
- 4gTurmeric Powder

- 10gSalt
- 40gGhee
- 900mlMeat Stock

Method
Follow each step in order. Ingredient names are highlighted as you go.

Heat the ghee in a heavy pot over medium-high heat.

Add the onion and cook until richly golden. Stir in the garlic and cook briefly.

Add the lamb shoulder and brown it well on all sides so the pot develops a deep layer of flavor.

Stir in the tomato, tomato paste, cumin powder, turmeric powder, black pepper, and salt. Cook until the tomatoes break down and the spices smell fragrant.

Pour in the meat stock, bring to a simmer, cover, and cook gently until the lamb is very tender and the broth has reduced.

Mash a few tender pieces of lamb into the broth to thicken the stew slightly.

Whisk or blend the softened fenugreek seeds with the water until airy, then stir in the lemon juice.

Serve the stew piping hot with the fenugreek froth on top and sahawiq on the side.
