    Whisk the white rice flour, turmeric powder, coconut milk, water, and salt until smooth. Let the batter rest while you prepare the other components.

    Stir the white sugar into the water until dissolved, then add the fermented fish sauce, lime juice, garlic, and bird's eye chili.

    Heat the vegetable oil in a skillet over medium-high heat. Cook the pork belly until browned and 63°C (145°F), then add the shrimp and cook until opaque and 63°C (145°F).

    Pour in a thin layer of batter and swirl the pan so it spreads evenly. Scatter some bean sprouts and scallion over one half.

    Cover the pan and cook until the crepe is set and crisp around the edges, then fold it over the filling.

    Use the vegetable oil to lightly coat the pan between crepes. Repeat with the remaining batter and filling.

    Arrange the romaine lettuce, fresh mint, and vietnamese coriander on a plate.

    Serve the crepes hot with the herbs and lettuce for wrapping, and the sauce on the side.
