Method
Follow each step in order. Ingredient names are highlighted as you go.

Cook the broken rice with the water until tender and fluffy, then keep warm.

Mix the lemongrass, garlic, soy sauce, fermented fish sauce, white sugar, and black pepper. Coat the pork chops and let it stand while the grill heats.

Heat a grill or grill pan to medium-high and brush it with the vegetable oil. Cook the pork chops until browned, lightly caramelized, and 63°C (145°F), then rest it for 3 minutes.

Stir the white sugar into the water until dissolved. Add the fermented fish sauce and lime juice, then stir in the garlic and bird's eye chili.

Fry the eggs until the whites are fully set; use pasteurized eggs if serving the yolks soft.

Serve the broken rice with the grilled pork chops, fried eggs, pickled carrots, and cucumber. Spoon over some of the sauce just before eating and pass the rest at the table.
