Method

Pat the artichokes dry well and press each one gently so the leaves open like a flower.

Heat the vegetable oil to 150°C (302°F), then fry the artichokes until they begin to soften.

Lift them out, drain briefly, and let them rest for a few minutes.

Increase the oil temperature to 190°C (374°F), then fry the artichokes again until the leaves are deeply crisp and the centers are tender.

Drain well, season with the salt, and serve at once with the lemon wedges.
