    Unsalted Butter (softened)

Filling

  • 500g
    Lamb Shoulder (finely chopped)
  • 300g
    Onion (finely chopped)
  • 5g
    Cumin Seeds (lightly crushed)
  • 3g
    Black Pepper (coarsely ground)

    Egg (beaten)

    Mix the all-purpose flour and the salt. Add the water and knead until smooth. Let the dough rest.

    Roll the dough out thinly, spread it with the unsalted butter, then fold and roll again to create layers. Chill briefly until easier to handle.

    Mix the lamb shoulder, onion, cumin seeds, black pepper, and the salt until evenly combined.

    Cut the dough into portions, place filling in the center of each piece, and fold into neat triangles or squares.

    Brush each pastry with the egg and sprinkle with the sesame seeds.

    Bake at 220°C (428°F) until the pastries are deeply golden and the center of the lamb filling reaches 71°C (160°F).
