Place the soaked white beans in a pot with the water, bring to a full boil for 10 minutes, then simmer until the beans are beginning to soften. Drain well.

Preheat the oven to 150°C (300°F).

Layer the partly cooked white beans, yellow onion, and bacon in a baking dish or Dutch oven.

Whisk together the molasses, brown sugar, mustard, apple cider vinegar, salt, black pepper, and hot water.

Pour the sauce over the beans and cover the pot tightly.

Bake until the white beans are very tender and creamy, stirring once or twice so the sauce coats the beans evenly.
