    Lamb Shoulder (cut into large pieces)
  • 150g
    Onion (finely chopped)
  • 20g
    Garlic (crushed)

    Meat Stock

    Plain Yogurt (room temperature)

    Soak the cracked wheat in the water for about 20 minutes, then drain well.

    Heat the ghee in a heavy pot over medium heat. Add the onion and cook until golden.

    Add the garlic, baharat, cumin powder, salt, and black pepper, and stir until fragrant.

    Add the lamb shoulder and brown it lightly on several sides.

    Pour in the meat stock, bring to a boil, then cover and simmer gently until the lamb shoulder is very tender.
