Stew
- 1.2kgMatooke (peeled and cut into chunks)
- 420gRed Bean (dried, soaked overnight, and drained)
- 180gOnion (finely chopped)
- 300gTomato (finely chopped)
- 12gGarlic (crushed)
- 35mlVegetable Oil
- 5gCurry Powder
- 12gSalt
- 1.5lWater

Method

Heat the vegetable oil and cook the onion until soft. Add the garlic, then the tomato, and cook to a thick sauce.

Stir in the curry powder and salt.

Add the red beans and water and bring to a rolling boil for 10 minutes.

Reduce the heat, cover, and simmer until the beans are nearly tender.

Add the matooke and continue simmering until both the beans and matooke are completely tender.

Mash a few pieces of matooke against the pot to thicken the stew and simmer uncovered until spoonable.
