Stew
- 520gFresh Bamboo Shoots (commercially prepared or thoroughly pre-boiled, drained, and sliced)
- 200gPeanut Paste
- 180gOnion (finely chopped)
- 300gTomato (finely chopped)
- 12gGarlic (crushed)
- 25mlVegetable Oil
- 9gSalt
- 1.1lWater

Method

Heat the vegetable oil and cook the onion until soft. Add the garlic, then the tomato, and cook to a thick base.

Add the fresh bamboo shoots and cook briefly in the sauce.

Whisk the peanut paste with the water until smooth and add it to the pot.

Add the salt and bring to a simmer.

Cook until the bamboo shoots are tender and the stew is creamy. Do not use untreated raw bamboo shoots.
