Method

Combine the semolina flour, all-purpose flour, and salt. Rub in the vegetable oil, add the lukewarm water, and mix just until firm. Cover and rest.

Knead the date paste with the cinnamon powder and orange blossom water, then shape it into thin logs.

Flatten the dough into strips, enclose a date log in each, mark the top, and cut into diamond shapes.

Heat the vegetable oil to 175°C (350°F) and fry until deep golden and crisp. Drain briefly.

Warm the honey with the lemon juice until fluid without boiling.

Coat the hot pastries in the warm syrup, then drain and cool before serving.
