Method
Follow each step in order. Ingredient names are highlighted as you go.

Place the eggs in a saucepan, cover with the water, and bring to a boil. Cover, remove from the heat, and stand until hard-cooked; cool, peel, and chop.

Heat the vegetable oil to 175°C (350°F) in a deep pan.

Fry the potato, eggplant, green bell pepper, and tomato in batches until tender and lightly browned. Drain well.

Chop the fried vegetables together to a coarse mixture.

Heat the vegetable oil in a skillet and cook the onion until soft, then add the garlic, harissa paste, cumin powder, salt, and black pepper.

Fold the seasoning into the vegetables and warm briefly.
