Method

    Boil the potato in the water until tender, then drain well and mash.

    Heat the vegetable oil in a pan and cook the onion, scallion, and garlic until softened. Stir in the curry powder, cumin powder, Scotch bonnet chili, turmeric powder, salt, and black pepper.

    Fold the seasoning into the potato and let the filling cool.

    Combine the all-purpose flour, baking powder, and salt. Add the water and knead to a soft dough, then cover and rest.

    Divide the dough and filling into the same number of equal portions. Flatten the dough, add the filling, and seal into thick rounds.

    Heat the vegetable oil to 175°C (350°F).

    Fry the pies until golden and cooked through on both sides, then drain and serve hot.
