Method
Follow each step in order. Ingredient names are highlighted as you go.

Combine the shark with the lime juice, garlic, onion, salt, and black pepper. Cover and refrigerate while the dough rests.

Mix the all-purpose flour, baking powder, salt, and water just until a soft dough forms. Cover and let it rest.

Pat the shark dry and coat it with the breadcrumbs.

Heat the vegetable oil to 175°C (350°F) in a deep pan.

Flatten equal portions of dough into rounds and fry until puffed and golden on both sides. Drain and keep warm.

Fry the shark until crisp outside and it reaches 63°C (145°F) in the thickest part, then drain well.

Split each bake and fill with the shark, iceberg lettuce, tomato, and cucumber.

Add the mayonnaise, mustard, and hot sauce and serve immediately.
