Method
Follow each step in order. Ingredient names are highlighted as you go.

Combine the all-purpose flour, active dry yeast, turmeric powder, cumin seeds, salt, and lukewarm water. Mix until a very soft, slightly sticky dough forms.

Cover and let the dough rise until puffy and airy.

Heat the vegetable oil in a saucepan over medium heat. Cook the onion and garlic until softened.

Stir in the curry powder, cumin powder, tomato paste, black pepper, and salt and cook until fragrant.

Add the chickpeas and water and simmer until the chickpeas are tender and the mixture is thick but spoonable, crushing a few chickpeas against the pan.

Heat the vegetable oil to 175°C (350°F) in a deep pan.

Divide the dough into equal portions, stretch each into a thin round, and fry until puffed and lightly golden on both sides. Drain briefly.

Layer the bara in pairs, spoon over the channa, and finish with tamarind chutney, hot sauce, and culantro. Serve immediately.
