    Chicken Thigh (boneless and skinless, cut into pieces)

    Brown Sugar
  • 15ml
    Browning Sauce
  • 30ml
    Vegetable Oil
  • 150g
    Onion (finely chopped)

    Garlic (finely chopped)

    Green Bell Pepper (finely chopped)

    Carrot (finely chopped)
  • 250g
    Pigeon Peas (rinsed)
  • 350g
    White Rice (rinsed)
  • 400ml
    Coconut Milk
  • 600ml
    Chicken Stock
  • 5g
    Fresh Thyme
  • 10g
    Salt

    Black Pepper
  • 15g
    Culantro (finely chopped)

    Season the chicken thigh with the salt and black pepper.

    Heat the vegetable oil in a heavy pot over medium-high heat. Add the brown sugar and let it melt to a deep amber without burning.

    Add the chicken thigh carefully and turn the pieces until well browned in the caramelized sugar.

    Add the onion, garlic, green bell pepper, carrot, fresh thyme, culantro, and browning sauce. Cook until the vegetables begin to soften.

    Stir in the white rice and pigeon peas until coated.

    Pour in the coconut milk and chicken stock and bring to a boil.

    Reduce the heat, cover, and cook until the white rice is tender and the chicken thigh reaches 74°C (165°F).

    Rest the pelau, covered, before fluffing and serving.
