Squeeze the limes into a blender, then add the onion, garlic, fresh ginger, Scotch bonnet chili, salt, vegetable oil, and water. Blend into a coarse marinade.

Pat the chicken dry, rub the marinade over and under the skin, cover, and refrigerate for at least 2 hours.

Heat a covered grill for two-zone cooking at about 200°C (400°F).

Place the chicken skin-side up over indirect heat, cover, and cook for 35 to 45 minutes.

Move the chicken over direct heat and grill briefly on both sides until browned and the thickest part of the breast and thigh reaches 74°C (165°F).
