Djenkoumé

    Corn Flour
  • 90g
    Tomato Paste
  • 150g
    Onion (finely chopped)
  • 10g
    Garlic (crushed)
  • 1pcs
    Scotch Bonnet Chili (whole)
  • 70ml
    Red Palm Oil
  • 8g
    Salt
  • 800ml
    Water

    Heat the red palm oil in a heavy saucepan over medium heat. Add the onion and cook for 5 minutes.

    Stir in the garlic and Scotch bonnet chili, then add the tomato paste and cook for 2 minutes.

    Pour in the water and add the salt. Bring to a boil.

    Reduce the heat to low and sprinkle in the corn flour gradually while whisking constantly.

    Cook for 12 to 15 minutes, stirring and folding with a sturdy spoon, until smooth, thick, and pulling away from the pan.
