Method

Preheat the oven to 180°C (350°F). Line a 20 cm (8-inch) square pan with the banana leaves.

Whisk the white rice flour, baking powder, and salt in a bowl.

In a second bowl, whisk the eggs and white sugar until smooth, then whisk in the coconut milk, unsalted butter, and vanilla extract.

Fold the dry ingredients into the wet ingredients just until the batter is smooth.

Pour the batter into the prepared pan and bake for 30 to 35 minutes, until lightly golden and a skewer inserted in the center comes out clean.

Cool in the pan for 15 minutes, then lift out, cool completely, and slice.
