Method

Combine the white sugar and water in a small saucepan. Cook over medium heat without stirring until deep amber, then pour into a heatproof mold and swirl to coat the base.

In a bowl, whisk the eggs and white sugar until smooth. Whisk in the coconut milk, vanilla extract, and salt without incorporating excessive air.

Strain the custard into the caramel-lined mold and cover the mold loosely with foil.

Bring the water in a steamer to a gentle simmer. Set the mold in the steamer, cover, and steam for 40 to 50 minutes, until the edges are set and the center still trembles slightly.

Cool for 30 minutes, then refrigerate at 4°C (40°F) for at least 4 hours before unmolding.
