    Mix the soy sauce, fresh ginger, garlic, lime juice, palm sugar, and salt until the palm sugar dissolves.

    Add the chicken breast, coat well, cover, and refrigerate for 30 minutes.

    Combine the peanut butter, coconut milk, shallot, red chili, and water in a small saucepan. Simmer over low heat for 5 minutes, stirring, until smooth and spoonable.

    Thread the chicken breast onto skewers and brush with the vegetable oil.

    Grill over medium-high heat, turning regularly, until lightly charred and the chicken breast reaches 74°C (165°F), about 8 to 10 minutes.
