Soak the rice noodles in the water until pliable but not fully soft, then drain well.

Stir the tamarind paste, fermented fish sauce, and palm sugar together until the sugar dissolves.

Heat the vegetable oil in a wok over high heat until shimmering, about 200°C (400°F). Add the garlic and shallot and stir-fry just until fragrant.

Add the shrimp and cook until they are nearly opaque. Push everything to one side, pour in the eggs, and scramble until softly set.
