Method

Heat the vegetable oil to 180°C (350°F) in a deep pan. Fry the egg noodles assigned to the topping until crisp and golden, then drain.

Heat the vegetable oil in a pot over medium heat. Add the garlic and shallot and cook until fragrant, then stir in the curry paste and fry briefly.

Pour in the coconut milk and chicken stock, add the chicken thigh, and simmer gently until tender and the chicken reaches 74°C (165°F).

Stir in the fermented fish sauce and palm sugar and simmer briefly to balance the broth.

Bring the water to a boil and cook the egg noodles assigned to the noodles until just tender, then drain.

Divide the cooked noodles among bowls and ladle over the broth and chicken.

Finish with the crisp egg noodles, pickled mustard greens, red onion, and limes.
