Dissolve the qurut cheese in the warm water, stirring until the mixture is smooth and tangy.

Arrange the torn lavash bread in a wide shallow serving dish.

Pour the qurut sauce over the lavash bread so the bread softens but does not become mushy.

Heat the vegetable oil in a pan over medium heat. Add the onion and cook until deeply golden and sweet.

Spoon the fried onion and a little of its oil over the soaked bread, then scatter the tomato and fresh coriander on top.
