Method

Bring the water to just below a boil, add the black tea, steep until strong, then strain and let it cool.

Cook the tapioca pearls in boiling water until soft and chewy, then drain.

Return the pearls to a small saucepan with the brown sugar and a splash of the hot cooking liquid. Simmer briefly until the pearls are glossy and coated.

Divide the pearls among glasses, add the ice, pour in the cooled tea, and finish with the whole milk.
