Method

Preheat the oven to 180°C (350°F) and spread the pita bread on a tray.

Bake the pita bread until crisp and lightly golden, then let it cool.

Place the tomato, cucumber, radish, red onion, fresh parsley, fresh mint, and pomegranate seeds in a large bowl.

Whisk together the sumac, lemon juice, extra virgin olive oil, and salt until combined.
