Method

Heat the vegetable oil in a heavy pot over medium heat. Add the onion and cook until softened and lightly colored.

Stir in the garlic and curry powder and cook briefly until fragrant.

Add the chicken thigh and salted beef and cook until the surfaces begin to brown.

Stir in the tomato paste and cook until it darkens slightly, then pour in the coconut milk and chicken stock.

Add the bay leaves, Maggi seasoning, salt, and black pepper, then bring the pot to a gentle simmer.

Stir in the white rice and red beans. Lay the smoked fish on top, cover, and reduce the heat to low.

Cook until the white rice is tender and has absorbed most of the liquid. Turn off the heat and let the pot stand covered so the rice finishes steaming.
