    Combine the chicken thigh, the turmeric powder, the chili powder, and the salt, then leave it to sit while you prepare the base.

    Heat the coconut oil in a pot over medium heat.

    Add the onion and cook until golden and softened.

    Stir in the garlic, the fresh ginger, the curry leaves, the cinnamon stick, the cloves, and the cardamom seeds, and cook until fragrant.

    Add the curry powder and stir for a few seconds to bloom the spices.

    Add the tomato and cook until it softens and begins to break down.

    Add the marinated chicken thigh and stir until the pieces are coated in the spice mixture.

    Pour in the water and coconut milk, bring to a gentle simmer, and cook until the chicken thigh is tender, the sauce has thickened, and the thickest pieces reach 74°C (165°F).
