Filling
- 150gHam (finely chopped)
- 60gUnsalted Butter
- 80gAll-Purpose Flour
- 600mlWhole Milk (warm)

Method

Melt the unsalted butter in a pan over medium heat and cook the onion until soft without letting it brown.

Add the all-purpose flour and stir for a minute to form a smooth paste.

Gradually whisk in the warm whole milk until the mixture becomes thick and smooth.

Stir in the ham, nutmeg powder, salt, and black pepper, and cook until the filling is very thick and pulls away from the sides of the pan.

Spread the filling in a shallow dish, cover the surface, and chill until firm, about 4°C (39°F).

Shape the chilled filling into small logs, coat them in the beaten eggs, then cover them evenly with the breadcrumbs.

Heat the vegetable oil to 180°C (350°F) and fry the croquettes in batches until deep golden.

Drain briefly and serve hot.
