- 500gWhite Bean (soaked overnight and drained)
- 250gChorizo (left whole)
- 200gBlood Sausage (left whole)
- 300gPork Shoulder (cut into large pieces)
- 100gOnion (halved)
- 10gGarlic (lightly crushed)
- 2pcsBay Leaf
- 4gSmoked Paprika
- 10gSalt
- 2.2lWater

Method

Put the white beans and water in a heavy pot and bring to a rolling boil for 10 minutes.

Lower the heat and add the pork shoulder, chorizo, onion, garlic, and bay leaves.

Cook at a bare simmer, partially covered, until the white beans are nearly tender.

Add the blood sausage and continue cooking gently until the beans are creamy and all the meats are hot and cooked through.

Stir in the smoked paprika and salt and simmer briefly.

Remove the onion and bay leaves, rest the stew for 10 minutes, and serve hot.
