Method

Heat a grill for medium-high direct cooking. Pat the tilapia dry.

Squeeze the lemon into a bowl, then mix in the fresh coriander, garlic, chili powder, vegetable oil, salt, and black pepper.

Rub the mixture over the tilapia and into the scored flesh.

Grill, turning carefully once, until the tilapia is opaque at the backbone, flakes easily, and reaches 63°C (145°F).
