    Cook the calrose rice in the water until tender and keep it warm.

    Blanch the spinach, squeeze it dry, and season it lightly with salt and sesame oil.

    Blanch the bean sprouts until tender, drain well, and season them lightly with salt and sesame oil.

    Heat the canola oil in batches and sauté the carrot, zucchini, and shiitake mushroom separately until just tender. Add the garlic to the mushrooms and season the vegetables lightly with salt.

    Stir the gochujang, soy sauce, white sugar, and water until smooth.

    Fry the eggs in the canola oil until the white and yolk are fully set, or use pasteurized eggs if serving a softer yolk.

    Divide the calrose rice among bowls and arrange the spinach, bean sprouts, carrot, zucchini, and shiitake mushroom over it.

    Top with the eggs, sauce, sesame oil, and scallion. Mix thoroughly before eating.
