Put the samp, sugar beans, and water in a large pot. Bring to a rolling boil for 10 minutes, skimming if needed.

Lower the heat and simmer gently, partially covered, until the sugar beans and samp are tender, stirring occasionally.

Melt the salted butter in a pan and cook the onion until soft.

Stir the onion mixture into the pot and continue cooking until creamy while the grains still hold their shape.
