- 800gBeef Brisket (cut into chunks)
- 25mlVegetable Oil
- 200gOnion (finely chopped)
- 10gGarlic (crushed)
- 30gTomato Paste
- 700mlBeef Stock
- 500gPotato (peeled and cut into chunks)
- 250gCarrot (peeled and cut into thick slices)
- 2pcsBay Leaf
- 2gDried Thyme
- 10gSalt
- 3gBlack Pepper

Method
Follow each step in order. Ingredient names are highlighted as you go.

Heat the vegetable oil in a heavy lidded pot and brown the beef brisket in batches. Return all the beef to the pot.

Add the onion and garlic and cook until fragrant, then stir in the tomato paste, dried thyme, black pepper, and salt.

Pour in the beef stock and add the bay leaves. Bring to a gentle simmer.

Layer the carrot and potato over the beef without stirring them into the lower layer.

Cover tightly and cook over low heat until the beef brisket is fork-tender and the vegetables are cooked through. Check occasionally that the pot is not dry, but avoid repeated stirring.

Remove the bay leaves, fold the layers together once, and serve hot.
