Method

Whisk the corn starch into the water until smooth.

Melt the ghee in a heavy pot, add the white sugar, and cook over medium heat until the sugar begins to dissolve.

Pour in the corn-starch mixture carefully and stir continuously as it thickens.

Add the ghee gradually while stirring until the xalwo becomes glossy, elastic, and pulls cleanly from the pot.
