- 650gCassava Root (sweet variety, peeled and cut into chunks)
- 120gOnion (finely chopped)

Place the chicken thigh, onion, garlic, fresh ginger, and red chili in a large saucepan or deep pot.

Pour in the coconut milk and water, then season with the salt and black pepper. Bring to a gentle simmer over medium heat.

Simmer the chicken thigh for 15 minutes, then add the cassava root.

Continue simmering until the cassava root is completely soft with no firm center and the chicken thigh is tender and reaches 74°C (165°F).
