Method
Follow each step in order. Ingredient names are highlighted as you go.

Cover the potato with the water and simmer until very tender. Drain well and cool until easy to handle.

Mash the potato until smooth, then mix in the all-purpose flour and salt to make a soft dough.

Divide the dough into equal pieces and roll each piece to about 2 mm (1/16-inch) thick on a lightly floured surface.

Cook the flatbreads one at a time on a dry griddle over medium-high heat until brown spots form on both sides and the centers are cooked through.

Mix the pork lard and unsalted butter and brush the hot lokše as they come off the griddle.
