- 300gRed Bean (soaked overnight and drained)
- 180gOnion (finely chopped)
- 12gGarlic (crushed)
- 200gCarrot (chopped)
- 140gCelery (chopped)
- 350gPotato (peeled and cubed)
- 800mlMeat Stock
- 2pcsBay Leaf
- 3gDried Thyme
- 4gBlack Pepper

Method
Follow each step in order. Ingredient names are highlighted as you go.

Soak the salted pork tail in the cold soaking water in the refrigerator, changing the water if it remains very salty. Drain well.

Put the soaked pork tail, red beans, and water in a large pot. Bring to a rolling boil for 10 minutes, skimming as needed.

Lower the heat and simmer until the red beans begin to soften.

Add the onion, garlic, carrot, celery, potato, meat stock, bay leaves, dried thyme, and black pepper.

Simmer until the red beans are fully tender, the vegetables are soft, and the salted pork tail is cooked through and tender.

Remove the bay leaves, taste before adding any extra seasoning, and serve hot.
